Ingredients:
- 1 whole turkey 12-14 lbs
- 2 tbsp olive oil
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- Salt and pepper to taste
- 1/2 cup butter, softened
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 2 lbs cauliflower, cut into florets
- 1/4 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped chives
- 1 lb green beans, trimmed
- 4 slices bacon, cooked and crumbled
- 1/4 cup sliced almonds, toasted
- 1 tbsp lemon juice
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 cup sugar-free cranberry sauce
- 1 cup almond flour
- 1/2 cup Swerve sweetener
- 1/4 cup melted butter
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1 cup chopped pecans
Instructions:
Preheat oven to 325F 163C
Rinse the turkey inside and out, pat dry with paper towels
In a small bowl, combine olive oil, chopped rosemary, chopped thyme, salt, and pepper
Rub the herb mixture all over the turkey, including under the skin
Place the turkey breast side up on a rack in a roasting pan
Roast the turkey in the preheated oven for 3-4 hours, or until the internal temperature reaches 165F 74C
In a bowl, mix softened butter, minced garlic, chopped parsley, salt, and pepper
Spread the garlic herb butter under the skin of the turkey and over the breast
Continue roasting the turkey until golden brown and cooked through
Meanwhile, steam cauliflower until tender, then mash with heavy cream, Parmesan cheese, and chopped chives
In a skillet, saut green beans with cooked bacon, toasted almonds, lemon juice, Dijon mustard, olive oil, salt, and pepper
Prepare the sugar-free cranberry sauce according to package instructions
For the low carb pumpkin pie, preheat oven to 350F 177C
In a bowl, mix almond flour, Swerve sweetener, melted butter, vanilla extract, cinnamon, nutmeg, ginger, salt, and chopped pecans
Press the mixture into a pie pan, bake for 10 minutes
Pour the pumpkin pie filling into the crust, bake for another 40-45 minutes, or until set
