Ingredients:
- 1 cup cooked quinoa
- 1 cup canned chickpeas, drained and rinsed
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, lightly beaten
- 1/4 cup breadcrumbs
- 4 whole grain burger buns
- Tzatziki sauce, lettuce, tomato slices, and cucumber slices for serving
Instructions:
Use a fork or potato masher to mash the chickpeas in a large bowl until they are mostly smooth
Add the ground quinoa, red onion, parsley, feta cheese, garlic, oregano, cumin, salt, pepper, egg, and breadcrumbs
Mix the ingredients together until they are well mixed
Make 4 burgers out of the mix
Put the nonstick skillet on medium heat and lightly oil it
For four to five minutes on each side, or until golden brown and fully cooked, remove from the heat
If you want, you can toast the burger buns
Put a quinoa burger patty on the bottom half of each bun
Then add tzatziki sauce, lettuce, tomato slices, and cucumber slices on top of the burgers
Finally, cover with the top half of the bun
Serve right away and enjoy
