Ingredients:
- 500g ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- Zest of 1 lemon
- Salt and pepper to taste
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 2 tablespoons olive oil
- 1 cup chicken broth
- Juice of 1 lemon
- 2 tablespoons chopped fresh parsley for garnish
Instructions:
In a large bowl, combine the ground beef, chopped onion, minced garlic, ground coriander, cumin, cinnamon, cardamom, lemon zest, salt, pepper, breadcrumbs, and beaten egg
Mix well until evenly combined
Form the mixture into small meatballs, about 1 inch in diameter
In a large skillet, heat the olive oil over medium heat
Add the meatballs and cook until browned on all sides, about 5-7 minutes
Pour in the chicken broth and lemon juice
Bring to a simmer, then reduce the heat to low and cover
Let the meatballs cook for an additional 10-15 minutes, or until cooked through
Once cooked, transfer the meatballs to a serving dish
Garnish with chopped parsley before serving
Serve the Moroccan lemon and cardamom meatballs hot, with couscous or rice on the side
