Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 cup unsalted butter, melted
- 1/2 cup buttermilk
- 1/4 cup plain yogurt
- 1 tsp vanilla extract
- 1 large egg
- 1/4 cup raspberry jam or your favorite jelly/jam
- 1/4 cup unsalted butter, melted for dipping
- 1/2 cup granulated sugar for coating
- 1 tsp ground cinnamon for coating
Instructions:
Set the oven temperature to 175C 350F
Use paper liners or grease a muffin pan
Combine all of the ground spices cinnamon, cardamom, cloves, ginger, and nutmeg with the flour, sugar, baking powder, baking soda, and salt in a mixing bowl
Melted butter, buttermilk, yogurt, vanilla extract, and egg should all be thoroughly mixed together in a separate bowl
Mixing until just combined, pour the wet ingredients into the dry ingredients
Avoid over-mixing
Partially fill each muffin cup with the batter
Put one tsp raspberry jam in the middle of every muffin cup
Pour additional batter over the jam until the muffin cups are about 3/4 full
A toothpick inserted into the center of the muffins should come out clean after 18 to 20 minutes of baking in a preheated oven
As the muffins bake, make the coating in a shallow bowl by combining the ground cinnamon and granulated sugar
When the muffins are done, take them out of the oven and allow them to cool for a short while
While still warm, coat each muffin thoroughly in the cinnamon-sugar mixture after dipping it into the melted butter
After coating, place the muffins on a wire rack to cool fully
Serve and savor your doughnut muffins with chai spices
