Ingredients:
- 1 cup cooked brown rice
- 1/4 cup chopped scallions
- 2 tablespoons sesame seeds
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 2 tablespoons vegetable oil
Instructions:
In a mixing bowl, combine the cooked brown rice, chopped scallions, and sesame seeds
In a separate bowl, whisk together the all-purpose flour, salt, and black pepper
Gradually add the flour mixture to the rice mixture, stirring until well combined
Slowly add the water and mix until you have a thick batter
Heat a skillet or frying pan over medium-high heat and add the vegetable oil
Spoon the pancake batter into the hot skillet to form small pancakes, spreading them out with the back of a spoon
Cook for 2-3 minutes on each side or until they are golden brown and crispy
Remove the pancakes from the skillet and place them on a paper towel-lined plate to remove excess oil
Serve the Brown Rice, Sesame, and Scallion Pancakes hot with your favorite dipping sauce
