Coconut Lime Greek Yogurt Pound Cake

This Coconut Lime Greek Yogurt Pound Cake tastes great with creamy Greek yogurt and tropical flavors. You can eat it as a dessert or a sweet treat at any time of the day.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup Greek yogurt
  • 2 tablespoons lime juice
  • Zest of 2 limes
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

Start by heating the oven to 350F 175C

A 9x5-inch loaf pan should be greased and floured

Whisk the all-purpose flour, baking powder, baking soda, and salt together in a medium-sized bowl

Put away

When the butter is soft, put it in a separate large bowl and mix it with the sugar until it is light and fluffy

Add the eggs one at a time, making sure that each one is fully mixed in before adding the next

The Greek yogurt, lime juice, lime zest, and vanilla extract should all be mixed in well

Slowly add the dry ingredients to the wet ones and mix them together until the batter is smooth

As soon as the loaf pan is ready, pour the batter into it and use a spatula to smooth the top

After the oven is hot, bake it for 50 to 60 minutes, or until a toothpick stuck in the middle comes out clean

The cake should cool in the pan for 10 minutes before being moved to a wire rack to cool all the way down

If you want to add more flavor, you can drizzle it with a lime glaze or sprinkle it with powdered sugar after its cool

Cut it up, serve it, and enjoy
