Ingredients:
- 8 oz 225g pasta
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 8 oz 225g mushrooms, sliced
- 6 cups fresh spinach leaves
- 1 cup cashews, soaked for 4 hours
- 1 cup vegetable broth
- 1/4 cup nutritional yeast
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg
Instructions:
Following the directions on the package, cook the pasta, drain it, and set it aside
Set olive oil on medium heat in a large pan
Put in the garlic and onion, and cook them until they get soft
When you add the mushrooms, cook them until they start to brown and give off their liquid
Its time to cook the spinach
Put soaked cashews, vegetable broth, nutritional yeast, salt, pepper, and nutmeg in a blender
Mix until its creamy and smooth
Then add the creamy sauce to the pan with the vegetables
Mix everything together, and cook for another two to three minutes
Toss the cooked pasta in the sauce and add it to the pan
Cook for one more minute to heat everything through
If you want, you can serve it hot and top it with extra nutritional yeast and black pepper
