Quinoa corn muffins that are tasty, healthy, and have a hint of sweetness and cheesy goodness. Its great as a snack or side dish
Ingredients:
- 1 cup cooked quinoa
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup melted butter
- 1/4 cup honey
- 1 large egg
- 1 cup corn kernels fresh or frozen
- 1/4 cup finely chopped green onions
- 1/4 cup shredded cheddar cheese
Instructions:
Preheat oven to 375F 190C
In a large bowl, combine quinoa, cornmeal, flour, baking powder, baking soda, and salt
In another bowl, whisk together milk, melted butter, honey, and egg
Add the wet ingredients to the dry ingredients, stirring until just combined
Fold in corn kernels, green onions, and shredded cheddar cheese
Spoon the batter into greased muffin cups, filling each about 2/3 full
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely
