Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can 14
- 5 oz diced tomatoes
- 1 can 6 oz tomato paste
- 2 cups beef broth
- 1 can 15 oz kidney beans, drained and rinsed omit for strict Paleo
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- Salt and pepper, to taste
- Optional toppings: sliced avocado, chopped cilantro, diced red onion
Instructions:
Over medium heat, brown the ground beef in a large pot or Dutch oven
Peel and chop the onion and bell pepper, then add them to the pot
Cook the vegetables for 5 to 7 minutes, or until they get soft
Put in the kidney beans, chili powder, cumin, paprika, oregano, salt, and pepper
Also add the tomato paste and diced tomatoes
Turn down the heat and let the chili simmer for a while
Cover and let it simmer for 20 to 30 minutes
Stir it every now and then to let the flavors mix
Test the food and add more seasoning if needed
Add toppings like sliced avocado, chopped cilantro, and diced red onion if you want, and serve hot
