Gluten-Free Vegan Soy-Free Wine Thumbprint Cookies

These tasty thumbprint cookies are vegan and gluten-free, so they can be eaten by people with a wide range of dietary needs. The red wine makes it a little fancier, and it goes really well with the sweet jam filling. You can eat them with a glass of wine or as a sweet treat at any time of the day.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup jam any flavor
  • 1/4 cup powdered sugar optional, for dusting
  • 1/4 cup red wine choose a vegan variety

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine almond flour, coconut flour, maple syrup, melted coconut oil, vanilla extract, and salt

Mix until a dough forms

Roll the dough into small balls, about 1 tablespoon each, and place them on the prepared baking sheet

Using your thumb or the back of a spoon, gently press down in the center of each cookie to create an indentation

Fill each indentation with about 1/2 teaspoon of jam

Bake for 10-12 minutes, or until the edges are lightly golden

Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely

Optional: Dust with powdered sugar before serving

While the cookies are cooling, pour the red wine into glasses to serve alongside
