Ingredients:
- 1 lb spicy Italian sausage, casing removed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can 14
- 5 oz diced tomatoes
- 2 cups chicken broth
- 8 oz penne pasta
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions:
In a large skillet, cook the spicy Italian sausage over medium heat until browned, breaking it up into crumbles with a spatula
Add diced onion, minced garlic, and diced red bell pepper to the skillet
Cook until vegetables are softened
Stir in diced tomatoes, chicken broth, penne pasta, dried oregano, dried basil, crushed red pepper flakes, salt, and pepper
Bring the mixture to a boil, then reduce heat to a simmer
Cover and cook for about 15-20 minutes, or until pasta is tender, stirring occasionally
Once pasta is cooked, sprinkle grated Parmesan cheese over the top and garnish with chopped fresh parsley before serving
