Ingredients:
- 4 halibut fillets 6 ounces each
- 4 tablespoons unsalted butter, softened
- 1 chipotle pepper in adobo sauce, minced
- 1 teaspoon adobo sauce
- 1 clove garlic, minced
- 1 tablespoon chopped fresh cilantro
- Salt and black pepper to taste
- 4 slices of lemon
- 4 sheets of aluminum foil about 12 inches each
Instructions:
Preheat your grill to medium-high heat or oven to 400F 200C
In a small bowl, combine softened butter, minced chipotle pepper, adobo sauce, minced garlic, and chopped cilantro
Mix until well combined
Place each halibut fillet on a separate sheet of aluminum foil
Season both sides with salt and black pepper
Divide the chipotle compound butter equally among the halibut fillets, spreading it evenly over the top of each fillet
Top each fillet with a slice of lemon
Fold the aluminum foil over the halibut to create sealed packets, ensuring there are no gaps for steam to escape
Place the foil packets on the grill or in the oven and cook for 10-12 minutes, or until the halibut is opaque and flakes easily with a fork
Carefully open the foil packets watch out for steam and serve the halibut hot, directly from the packets
