This Vegan Lentil Shepherds Pie is a hearty and filling way to spend the evening. Its a great gluten-free and vegan meal because its full of protein and vegetables.
Ingredients:
- 2 cups cooked lentils
- 1 cup diced carrots
- 1 cup frozen peas
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 4 cups mashed potatoes
Instructions:
Preheat oven to 375F 190C
In a skillet, saut diced carrots, peas, onion, and garlic until tender
Add cooked lentils, tomato paste, soy sauce, thyme, paprika, salt, and pepper
Cook for another 5 minutes
Transfer the lentil mixture to a baking dish and spread mashed potatoes evenly on top
Bake for 25-30 minutes, or until the potatoes are lightly browned
