Ingredients:
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup unsalted butter, melted
- 1/4 cup plain yogurt
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 egg
- 1 tbsp poppy seeds
- For the glaze:
- 1/2 cup powdered sugar
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
Instructions:
Preheat your oven to 350F 175C and grease a doughnut pan
In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
In another bowl, mix the melted butter, yogurt, lemon juice, lemon zest, and egg until well combined
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix
Fold in the poppy seeds
Spoon the batter into the prepared doughnut pan, filling each cavity about 2/3 full
Bake in the preheated oven for 10-12 minutes or until the doughnuts spring back when lightly touched and are golden brown
While the doughnuts are baking, prepare the glaze
In a small bowl, combine the powdered sugar, lemon juice, and lemon zest
Mix until smooth
Once the doughnuts are done, let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely
Once the doughnuts are cool, dip the tops into the lemon glaze, allowing any excess to drip off
Place the glazed doughnuts back on the wire rack to set for a few minutes before serving
