Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup chopped pecans
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions:
Mix the flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg in a sizable mixing bowl
Mix the chopped pecans into the dry ingredients after adding them
Mix the melted butter, egg, buttermilk, and vanilla extract in a different bowl
Mixing until just combined, pour the wet ingredients into the dry ingredients
Dont overmix; a few lumps are acceptable
Grease a non-stick skillet or griddle with cooking spray or butter and heat it over medium heat
Transfer a quarter cup of the pancake mixture onto the heated griddle
Cook until surface bubbles appear, then turn and continue cooking until golden brown on the other side
Continue with the remaining batter, brushing the griddle with extra butter or cooking spray as needed
Warm pancakes should be served with maple syrup and extra chopped pecans, if preferred
